Spinach Mint Rice

This filling and flavorful Spinach Rice is packed with warm spices and fresh vegetables for a gluten-free dish everyone will enjoy!

For Spinach Puree

  • 3 cup roughly spinach
  • mint leaves
  • 2 green chilies
  • few coriander leaves
  • Ginger and garlic

Other Ingredients For Spinach Rice

  • 1 cup basmati rice (or any fragrant or regular rice variety)
  • 2 tbsp oil (any neutral flavor oil)
  • 1 tej patta (Indian bay leaf)
  • 3-4 cloves
  • 1 inch cinnamon
  • 2 green cardamoms
  • 1 bay leaf
  • 1 tsp cumin seeds
  • Garam masala
  • Salt (as required)
  1. Cook rice separately in a pan



  2. Blanch Spinach leaves in water for 3 to 4 mins and strain the water and put them in a mixy jar then add bunch of mint leaves, 2 green chillies, few coriander leaves, ginger and garlic and grind it to a paste.



  3. Chop vegetables of your choice like french beans, capsicum, broccoli, green peas, sweet corn, carrot, cauliflower etc.



  4. Add one tablespoon of ghee and one tablespoon oil in a pan, once it is heated add cinnamon stick, cumin seeds, 2-3 pepper, cloves, cardamom, one bay leaf n saute for a minute then add two finely chopped onions and once they turn light brown add in all the vegetables, add salt and cook them. Once they are 80% cooked add in the Spinach and mint puree.



  5. Cook for another 5 mins and add little garam masala and salt as required and finally add in the cooked rice.



  6. Lastly garnish it with few cashews sauteed in ghee
