Okay, But What Is a Spring Salad?

 

So I to didn’t really know what constitutes a salad for being “springy”. After doing some research, I’ve discovered that a simple salad has things like asparagus, peas, and mint. Additionally, it really comes down to the colour. Add in some radishes and purple carrots to get that bright spring-like colour. 

Lastly, when it comes to spring salads, we want to keep it light, which is why I decided to pair this salad with a lemon, garlic and mint dressing; truly to die for!

Now, let’s talk live lettuce. With vertical farming, there is no soil, so we need to replace it with some other kind of growing media. Here, we’re using peat moss plugs, which is where the roots are going to attach to. 

The benefit of harvesting lettuce live is that it will last way longer than the stuff you get at the store! If you keep your plug wet, it will continue to stay just as fresh as the day you cut it off the tower. 

What About Salad Dressing?

 

I honestly struggled to think of a dressing that would go well with this recipe. After much debate, I settled on a delicious lemon garlic and mint dressing, which pairs PERFECTLY with this recipe. 

The beauty of this dressing is that it’s super light and doesn’t really take away from all the other delicious flavours in this salad. Not to mention it only takes minutes to make. 

Spring Salad

Today, we’re talking about my recipe for an easy spring salad that’s ready in 10 minutes or less! This recipe is filled with pistachios, feta, radishes, peas, and so much more! Not to mention this spring salad recipe is paired with a super simple garlic, lemon and mint dressing! 

  • 4 cups lettuce
  • 2 radishes (sliced)
  • ⅓ cup peas
  • ¼ cup pistachios (chopped)
  • 1 avocado
  • ½ cup feta (crumbled )
  • ½ cucumbers (sliced)
  • 1 carrots (shaved in ribbons)

Dressing

  • ¼ cup olive oil
  • 1 garlic clove
  • 1-2 tbsp lemon juice
  • 5-6 mint leaves chopped
  • ½ tsp salt
  • ¼ cup honey
  1. Begin by preparing your ingredients. Slice your radishes & cucumber thinly, chopped pistachios, dice avocado, crumble feta, and shave carrot into ribbons.



  2. In a large bowl, add your washed lettuce.



  3. Add the remainder of your ingredients over top and toss.



  4. Pour dressing over your salad, stir and enjoy!



Dressing

  1. Begin by mincing your garlic and chopping your mint.



  2. Add all ingredients to a jar and stir or shake until completely combined.
